The reason the word isn't translated as "uncle" into English is because Koreans don't tend to use the word uncle or aunt for people who aren't actually their uncles or aunts, in the way that it seems Chinese (and Spanish speakers?) do. In Korean, that word is ajusshi or ajumma -- it can mean a generic middle-aged person, but it's also used to denote familiarity. If that word is "uncle" in your target language, i think it's up to you to decide how to convey that...

Yes, the royal terms are fairly challenging! One tricky thing I encountered was being consistent, because there are no direct equivalents and are therefore many ways to say the same thing.
